Chocolate Covered Strawberries

Chocolate dipped fruits are always a treat. Especially chocolate covered strawberries. Whether you make these as a special Mother's Day treat or Valentine's Day indulgence, these are simple, easy and effortless to create. Place them in a bowl on their own, or served with whipped cream and Champagne for that added luxury.

  • 450 grams Fresh strawberries
  • 200 grams Chocolate
  • 2 tbsp Vegetable oil
  • Garnish (optional)
  • 50 grams Melted white chocolate
  • 50 grams Finely chopped nuts

  1. Prepare Strawberries
  2. Wash strawberries under cold running water and let drain completely.
  3. Wipe them well to drain any excess liquid - If the strawberries are not completely dry, any drop of water that falls into your chocolate will seize the chocolate. (that's what I meant by tricky and frustrating - now you know).
  4. Best practice - I wipe each strawberry with a paper hand towel. Then I air dry for another hour at least so any mist on the stalks will dry as well. 
  5. Melt Some Chocolate
  6. Break chocolate into smaller pieces.
  7. Microwave for about 30 secs to one minute until completely melted.
  8. Alternatively, use a double boiler method to melt chocolate.
  9. Add vegetable oil to the melted chocolate - stir well.
  10. This will thin the chocolate giving you a smooth and shiny finish. Plus a thinner chocolate consistency makes it easy to dip the strawberries.
  11. Dip Strawberries
  12. You can pick a strawberry by the stalk (green) and dip into the chocolate.
  13. Hold it above the chocolate for a few seconds to let excess chocolate drip. 
  14. Gently rub the back of the strawberry over the edge removing any excess.
  15. Place on a parchment paper leaving enough room between each one of them.
  16. Chill Strawberries - Storage
  17. Place the tray in the fridge for 20 minutes until the chocolate is set.
  18. These will stay well in the fridge for up to 3 days.
  19. As the strawberries lose their freshness the chocolate will start to crack and fall off.
